  • 1 tablespoon clarified bacon fat
  • 2 1/8 cups (500 mls) rye whiskey

  • 1 cup (250 mls) amaretto liqueur

  • 1 teaspoon Grade A maple syrup, chilled
  • 1 ounce (30 ml) bacon fat-washed rye whiskey
  • 1/2 ounce (15 ml) peanut butter-infused amaretto liqueur
  • 1 pinch applewood-smoked sea salt, for garnish

  1. Clarify Bacon Fat: Combine rendered bacon fat with water, boil, simmer, then refrigerate until a solid layer of fat forms on top. Use this clarified fat for the infusion.
  2. Infuse the Whiskey: In a jar, mix 1 tablespoon of clarified bacon fat with rye whiskey. Shake occasionally over 4 to 16 hours, depending on desired intensity.
  3. Freeze & Strain: Freeze the mixture to solidify the fat, then strain the whiskey through cheesecloth to remove any solid fat, resulting in a clear, bacon-flavored whiskey.

Make Peanut Butter-Infused Amaretto:

  1. Infuse Amaretto: Mix 1 tablespoon of creamy peanut butter with amaretto in a jar. Let stand for 30 minutes.
  2. Strain: Strain the mixture to achieve a smooth, peanut butter-flavored liqueur.

Assemble the PB & Bacon Shot:

  1. Prepare Shot Glass: Pour chilled Grade A maple syrup into the bottom of a shot glass.
  2. Mix the Shot: In a cocktail shaker filled with ice, combine bacon fat-washed whiskey and peanut butter-infused amaretto. Shake well.
  3. Layer the Shot: Strain the mixture slowly over the back of a bar spoon to layer it on top of the maple syrup in the shot glass.
  4. Garnish: Add a pinch of applewood-smoked sea salt on top as garnish.
